You can set a correct answer upon creating a poll question. This is the grey checkbox just to the left of the answer choice. It’s a new feature we made just before back to school. Otherwise, are these response settings generally the same for all of your poll questions? If you find yourself changing the same 1-2 settings then I would recommend setting a Template Poll. With a template you can customize the default settings for all of your new polls. You can get more details here:
